Food is an indispensable thing for people every day, so the cleaning of food is very important. According to the national production standards, food clean workshop needs to achieve 100,000 level of air purification standards. In this way, it can effectively reduce the deterioration of the produced products, prolong the shelf life of the food, and improve production efficiency.

1. What does the clean workshop mean?

The clean workshop is also called the dust-free workshop, clean room, and dust-free room. It refers to a specially designed room that removes pollutants such as particles, harmful air, and bacteria from the air within a certain space and controls indoor temperature, cleanliness, indoor pressure, airflow velocity, and distribution, noise, vibration, lighting, and static electricity within a certain range of requirements.

What is a 100,000-level clean workshop? To put it simply, the number of particles in the workshop with a diameter ≥of 0.5 microns per cubic meter of air is no more than 3.52 million. The fewer particles in the air, the less dust, and microorganisms, the cleaner the air. The 100,000-class clean workshop also requires that the workshop should have 15-19 air changes per hour, and the air purification time after complete air change should not exceed 40 minutes.

2.How to partition the food factory clean workshop

The general food factory clean workshop can be roughly divided into three areas: general operation area, quasi-cleaning area, clean operation area.

General operation area (non-cleaning area): storage area of general raw materials, finished products, tools, packaging finished products and other areas with low exposure risk of raw materials and finished products, such as outer packing room, raw and auxiliary materials warehouse, packaging materials warehouse, outer packing workshop, finished products warehouse, etc

Quasi-cleaning area: the second requirement is that it does not require secondary dressing, such as raw material processing, packaging material processing, packaging, buffer room (unpacking room), general production processing room, non-ready-to-eat food inner packaging room, and other finished products processing but not directly exposed areas.

Cleaning operation area: refers to the sanitary environment requirements are the highest, personnel, environmental requirements are higher, must be disinfected and replaced with dust-free clothing before entering, such as raw materials, finished products exposed processing area, food cold processing room, ready-to-eat food cooling room, to be packaged ready-to-eat food storage room, ready-to-eat food internal packaging room.
